Jerome Jeannest, a proud French and American citizen, brings over 20 years of distinguished hospitality leadership to Forke Restaurant, where he combines his passion for food, deep cultural heritage, and dedication to exceptional service. As Owner-Operator, Jerome infuses Forke’s French American cuisine with cherished family recipes passed down through generations—celebrating authentic flavors, tradition, and heartfelt hospitality.
Raised in France, Jerome’s early career includes valuable experience at renowned Parisian hotels such as Hôtel de Crillon and Hôtel Nikko, where he honed his skills in world-class luxury hospitality. His extensive career also spans prestigious venues across the United States, including iconic properties like The Cosmopolitan of Las Vegas, St. Regis Los Angeles, and Topgolf Las Vegas. Known for his strategic vision and operational excellence, he has led openings and transformations of more than seven hospitality destinations, always prioritizing guest satisfaction and team empowerment.
At Forke Restaurant, Jerome’s vision is to create a warm and inviting space where timeless French family dishes meet modern American innovation. His unique perspective as a dual citizen allows him to seamlessly blend the best of both cultures, bringing guests an experience that is sophisticated yet approachable, rooted in tradition yet inspired by contemporary tastes.
Beyond running Forke, Jerome is also a dedicated hospitality educator and community leader. Fluent in French and English, he actively teaches hospitality leadership and contributes to nonprofit efforts, embodying a lifelong commitment to service excellence and cultural connection.

Chef Miguel Martinez, Executive Chef and Partner brings nearly 20 years of culinary excellence to the kitchen, defined by a deep respect for ingredients, refined technique, and a passion for hospitality. His cooking philosophy centers around seasonal, ingredient-focused cuisine executed with precision and creativity to deliver unforgettable guest experiences.
Chef Miguel has played key roles in leading kitchen operations, mentoring culinary teams, and developing menus that marry tradition with innovation. In previous Vegas local tenure, Chef Miguel crafted a dynamic and elevated brunch program that drew widespread acclaim for its originality and flavor.
Chef Miguel’s culinary roots run deep, shaped by hands-on experience at some of the country’s most celebrated kitchens. He has held leadership positions at Todd English, El Dorado Cantina, and PKWY Tavern, and sharpened his skills in earlier roles at Rock House, Tuscan Grill, and more. Throughout his career, Miguel has built a reputation for strong leadership, high standards, and a collaborative approach that empowers his teams to thrive.
Dedicated to continual growth, Chef Miguel has completed elite culinary stages at Per Se, Le Bernardin, Eleven Madison Park, Guy Savoy, and Alex, and apprenticed at icons like Bouley and Robuchon at the Mansion. These experiences have deeply influenced his culinary identity, blending classical French training with modern American sensibilities.
